Lemon Pound Cake
based on Starbucks Lemon Loaf
I basically followed the recipe except:
- I doubled it;
- I forgot to add oil;
- I substituted 1/2 C. of honey for 1/2 C. of sugar because I ran out of sugar;
- I didn't have any lemon extract, so I used almost 1 C. of lemon juice in the cake and about a tablespoon of lemon juice in the icing; and,
- I used skim milk because you will very rarely find any animal milk other than skim in my fridge.
In the future, I might consider adding:
- ginger,
- poppy seeds,
- the right ingredients.
